




Working Methods Extract Canopy/Hood
The structure of the canopy is to be chemically cleaned internally and externally by hand, using a degreaser. This includes filter housings and drip trays. If the canopy has a fire suppression system fitted, it must be isolated by the customer. All cooking equipment below the canopy should be removed by the customer if possible. If it cannot be removed, it will be covered with plastic sheeting and spreader boards will be placed on top of cooking equipment for protection.
Extract Ductwork/Chimney
The interior of the duct to be chemically cleaned using a degreaser and scraper to remove hard deposits. Please note if residual grease has carbonised within the ventilattem and solidified over the years we may be unable to achieve a 100% clean. Access to the duct is gained by installation of quick release access doors, generally required at 2 metre centres. For safety reasons, the vertical chimney riser will be deep cleaned from the ground or a flat roof level up to 3 metres. If the vertical riser chimney is on the outside of the building and is higher than 3 metres and the customer wants all of the vertical riser deep cleaned, a mechanical cherry picker will be required for health and safety reasons, which will be added to the customer's invoice. (If this applies to you, it will be shown on the work schedule and prices.) Photographs of the ductwork will be taken as proof of work being carried out and kept on file for insurance purposes.
Extract Fan Unit/Motor
The fan unit will be removed from the duct only if the electrical supply cable is long enough to allow this, the motor housing and propeller will be cleaned with a scraper and wire tool only to remove hard deposits. If the fan unit cannot be removed from the duct, access could possibly be gained by fitting a quick release access door either side of the motor. (We will not disconnect the electrical supply cable to the fan motor.) Photographs of the fan unit will be taken as proof of work being carried out and kept on file for insurances purposes. We cannot guarantee the fan motor will improve extraction when cleaned. Please note that extremely contaminated fans require more specific dilute chemical preparations in order to clean. In rare circumstances this may affect the performance of the fan. We are therefore unable to accept liability for any subsequent operating difficulties.
Access Doors/Windows
We use high quality tab type insulated doors with positive seal gaskets and camlocks for easy access to the ductwork.
Structure
The ceiling will be washed down using a detergent/degreasing agent and rinsed down with water, although certain types of ceiling cannot be cleaned this way and can only be brushed down to remove surface dirt. You will be notified of this, if this is the case. The canopy will be degreased; the ductwork will be cleaned to arms length.
Walls
All work surfaces, tiled or painted, will be degreased using hand sprays. This also includes pipe work, fixtures and fittings. This also applies to doors, door frames, windows and window frames. All posters are to be removed from the walls by the customer.
Floors
An appropriate floor cleaner and electric scrubbing machine will be used to clean these areas and a wet vacuum used to pick up excess dirt and water. The access areas beneath equipment, items will be removed where possible.
Equipment
1. Cooker tops, ovens and grills will be dismantled where possible and soaked in a degreasing solution within a cleaning tank. The structure will then be degreased and decarbonised using an oven cleaner. A polish will then be applied to all stainless steel surfaces. (Note: the strong industrial chemicals we use are for commercial catering equipment and sometimes staining of the metal surfaces can occur.)
2. Chip fryers should be emptied prior to the clean and then they will be filled with water and degreasing agent and boiled to remove the grease and dirt. The exterior will then be cleaned with a degreasing solution and stainless steel surfaces finished with polish. If fryers are not emptied, exteriors only will be cleaned.
Exteriors only of fridges, freezers and dishwashers will be cleaned with a degreasing solution unless otherwise stated. Polish will be applied if appropriate.
